Bicarbonate buffer system helps to maintain  pH at  level of 7.2-7.4 both inside a living organism and in culture media.

Media with sodium bicarborate are used in CO2 incubators, because bicarbonate buffer system needs CO2 level of 5-10% in the atmosphere to work.
