Widely used in cell biotechnology because it maintains physiological pH despite changes in the concentration of CO2 in the atmosphere, unlike bicarbonate buffer. HEPES dissociation decreases as temperature falls, making it more effective at maintaining enzyme structure and function at lower temperatures.
